Spinach & Bacon Egg Muffins Recipe

These spinach & bacon egg muffins are protein-packed, blood-sugar friendly, and perfect for busy mornings or slow cozy ones alike. Meal prep once, feel good all week.



Recipe (makes 12 muffins):


Ingredients:

• 1 tbsp olive oil

• 1 lb pork sausage, (casings removed) or bacon ( we use beef bacon )

• 2 cups baby spinach, chopped

• 16 eggs

• 1/2 cup water (or milk of choice)

• 1/2 tsp sea salt

• 2 green onions, chopped


Directions:

  1. Preheat oven to 350°F and grease a muffin tin.

  2. Cook sausage in a pan until browned. Add spinach and cook until wilted. Let cool slightly.

  3. Whisk eggs, water, and salt. Stir in green onions.

  4. Divide sausage mixture into muffin cups, pour egg mixture over top.

  5. Bake 15–18 minutes, until set. Let cool slightly and enjoy!
